Victorinox Bakers knife - Black Alox





Here is an older vintage "Victoria" tang stamped Victorinox Bakers knife in black alox. It has a company name on the front side of "Hans Kaspar AG Zurich". This is a serrated blade model. These come in many colors and you can still buy a plain red alox one today in most knife shops worldwide that sell Victorinox products.

Victorinox Alox Bakers Knives in colors




Victorinox has been manufacturing this slim single bladed "Bakers Knife" for many years. I am not really sure when they first started but I am sure it was probably at least since the 1950's since some examples I have seen seem to date to that time frame.
This knife is a single curved blade with either a "wavy"(serrated edge) or a plain edge which is much rarer and very hard to find. They are about 90mm's long in the closed position, and super thin due to the thin alox scales in a variety of colors. Plain red is currently available in most cutlery shops selling Victorinox products. There are many made with company names or other advertising for bakery shops and suppliers. Stainless steel has been used as well for scales.
If you are not familiar with the use of these knives, basically they are used to cut the top of a bread or roll dough ball in different patterns to allow for steam escape and expansion and also decoration as the dough bakes. The typical french loaf bread has several slits cut cross the top down the entire length of the loaf.
